"Homebrew" is not a term I've heard gamers use, but we'd recognize it. (I suspect "homebrew" didn't catch on because gamers are, for the most part, not drinkers. Nor cooks.) I don't know if there is a common term; it's a near-universal practice that each group does on its own so there's almost no common labels. Some groups call them "house rules." For other groups, that's just the term for modifications to the official rules, not remix/crossover/drastic changes rules. Others have their own term for each rules-system they come up with.
And it feels really weird to try to describe it, 'cos I'm one person, with experience with a small number of gaming groups. I suppose that's where I just try to have faith that the PPOV will eventually kick in and other people will fill in any big gaps and make corrections as necessary. Maybe I can poke through old issues of Dragon, Dungeon & The Space Gamer and see if I've forgotten some nice simple terminology.
